Focusing as always on freshness and purity, Valio R&D came up with a functional skimmed milk powder ingredient produced solely from fresh Finnish raw milk, the cleanest in the EU. The mineral composition is altered employing one of Valio’s unique technologies.

Valio Mineval™ is a 100% milk powder product that accomplishes essential requirements in food manufacturing, while enabling a natural ingredient declaration with none of the traditional E-code additives. It’s labelled simply as a natural milk product and is also GMO-free.

Making better creams

The first task was to improve heat stability, preventing protein coagulation during cooking, and Valio Mineval™ enabled us to dispense with sodium caseinate without adding other stabilisers.

Valio Mineval™ functions as a natural thickening agent in our heat sensitive creams, advancing texture, preventing syneresis and keeping viscosity stable. It even tastes better than sodium caseinate and many other additives.

Further dairy applications

We next looked at a broader range of product applications and went on to develop a significant set of properties. What works for creams is easily extended in a variety of ways to other dairy categories, including fermented products such as yoghurts and soured items like crème fraiche, as well as dairy drinks and recombined milks, desserts, bakery products, fresh and processed cheeses, and spreads.

A smoother texture and structure in better tasting yoghurts

Valio Mineval™ is an ideal solution in yoghurts and has a high clean label value with natural dairy inputs and at the very least a neutral ingredient declaration.

It’s a natural and effective texturizing agent in low fat recombined yoghurts. It increases viscosity and offers good shelf stability through decreased whey separation during storage. Valio Mineval™ has a slightly salty taste profile that picks out positive fruitiness in fruit and berry yoghurt flavours.
