Baked Black Bean Burger

Ingredients
For burger:
- 1 Small red onion, roughly chopped
- 8 Oz Shiitake mushrooms, stemmed and roughly chopped
- 15 Oz Black beans, drained, rinsed and patted dry
- 1½ cups Plain breadcrumbs
- 1 tsp Ground coriander
- 1 tsp Kosher salt
- ¼ tsp Freshly ground black pepper
- 1 tbsp Olive oilc

For guacamole:
- 2 Ripe avocados, pitted and peeled
- 1 Small shallot, minced
- 1 Garlic clove, minced
- 0 Kosher salt and freshly ground black pepper, to taste
For assembly:
- 4 Sesame seed hamburger buns, split and lightly toasted
- 1 Small red onion, sliced into 1/4-inch thick rounds
- 1 Beefsteak tomato, sliced into 1/4-inch thick rounds

Instructions
- Preheat oven to 400°F and line rimmed baking sheet with parchment paper.
- Combine onion, mushrooms, and black beans, in food processor and pulse until finely chopped. Transfer mixture to large bowl. Fold in breadcrumbs, coriander, salt, and pepper until combined. Form into four 1-inch thick patties. Brush patties liberally with olive oil. Bake on prepared baking sheet until dark golden-brown, about 30 to 40 minutes. Top hot patties with 2 slices Muenster cheese.
- For the guacamole, combine avocado, shallots, and garlic in small bowl. Season with salt and pepper.
- Spread guacamole on both sides of buns. Top each bottom bun with burger patty. Layer with red onion, tomato and top with bun lid and serve.
