Chicken Cordon Bleu Meatballs

  • Vegetable or Grapeseed Oil

Meatballs:

  • 1 lb Ground Chicken
  • 1 cup Diced Ham
  • 1 cup Panko Bread Crumbs, Divided
  • 3 Large Eggs, Divided
  • 1 tbsp Minced Fresh Parsley, Plus More for Serving
  • 1 Kosher Salt, to Taste
  • 1 Ground Black Pepper, to taste
  • ¼ cup Grated Parmesan Cheese

Instructions

  1. Heat oil in large, high-sided skillet to 350°F. Meanwhile, combine chicken, ham and 1/2 cup bread crumbs in large mixing bowl. Slightly beat one egg and add to chicken mixture. Season with salt and pepper and mix until just combined. Form into 1.5” balls.
  2. Add remaining eggs to small bowl with 1 tablespoon water and beat with fork. Add remaining bread crumbs and Parmesan cheese to second small bowl and mix until combined. Arrange bowls near stove with paper-towel-lined plate.
  3. When oil has reached 350°, dip meatballs into egg mixture and roll in the bread crumb and Parmesan mixture to coat. Carefully add to hot oil and cook, turning occasionally, until all sides are golden-brown and chicken is cooked through, about 5-7 minutes. Transfer finished meatballs to paper-towel-lined plate and continue with remaining meatballs.
  4. Preheat oven to broil. Arrange cooked meatballs on baking sheet and top each with 1-2 small squares of Swiss cheese. Broil 1-2 minutes, until cheese is melted. Arrange meatballs on serving platter, cheese-side-up. Serve meatballs with toothpicks or cocktail skewers, garnished with fresh parsley.
