Meatballs:
- 1 lb Ground Chicken
- 1 cup Diced Ham
- 1 cup Panko Bread Crumbs, Divided
- 3 Large Eggs, Divided
- 1 tbsp Minced Fresh Parsley, Plus More for Serving
- 1 Kosher Salt, to Taste
- 1 Ground Black Pepper, to taste
- ¼ cup Grated Parmesan Cheese

Instructions
- Heat oil in large, high-sided skillet to 350°F. Meanwhile, combine chicken, ham and 1/2 cup bread crumbs in large mixing bowl. Slightly beat one egg and add to chicken mixture. Season with salt and pepper and mix until just combined. Form into 1.5” balls.
- Add remaining eggs to small bowl with 1 tablespoon water and beat with fork. Add remaining bread crumbs and Parmesan cheese to second small bowl and mix until combined. Arrange bowls near stove with paper-towel-lined plate.
- When oil has reached 350°, dip meatballs into egg mixture and roll in the bread crumb and Parmesan mixture to coat. Carefully add to hot oil and cook, turning occasionally, until all sides are golden-brown and chicken is cooked through, about 5-7 minutes. Transfer finished meatballs to paper-towel-lined plate and continue with remaining meatballs.
- Preheat oven to broil. Arrange cooked meatballs on baking sheet and top each with 1-2 small squares of Swiss cheese. Broil 1-2 minutes, until cheese is melted. Arrange meatballs on serving platter, cheese-side-up. Serve meatballs with toothpicks or cocktail skewers, garnished with fresh parsley.
