Ingredients

For Havarti & Ham:

  • Focaccia
  • Finlandia Imported Havarti Slices

  • Microgreens
  • Green Olives

Make the Horseradish Crèma:

  • 1¼ cups sour cream
  • ¼ cups prepared horseradish
  • 1 tsp Kosher salt
  • 1 tsp ground black pepper

  • Focaccia

  • Sliced corned beef
  • Sauerkraut
  • Baby gherkins

Make the Thousand Island Dressing:

  • 1 cup mayonnaise
  • 2 tbsp ketchup
  • 2 tbsp sweet pickle relish
  • 1 tsp Worcestershire sauce
  • Salt & paprika for taste

For Gruyere & Mushrooms:

Make the Chipotle Mayo:

  • ½ cup mayonnaise
  • ¼ cup sour cream or Greek yogurt
  • 1 tsp fresh lime juice
  • ½ tsp chili powder
  • Salt & paprika for taste

For Quick Caramelized Onions:

  • 1 large Vidalia onion
  • 2 tbsp olive oil
  • ½ tsp sugar
  • ½ tsp salt

For Sautéed Mushrooms:

  • 4 Oz button mushrooms, sliced
  • 2 tbsp

  • 1 garlic clove, minced
  • 1 tsp dried thyme

Instructions

To prepare Focaccia stacks:

  1. Cut focaccia loaf into equal size squares, place pieces onto a baking sheet and lightly toast and layer with ingredients above. Keep ingredients in place with a skewer.

For the Horseradish Crèma:

  1. Whip all ingredients together, let sit in refrigerator for 1 hour.

Prepare Havarti & Ham:

  1. Layer Horseradish Crema on Focaccia bread with black forest ham and slices of imported Havarti. Top with microgreens and green olives.

For the Thousand Island Dressing:

  1. Whip all ingredients together, let sit in refrigerator for 1 hour.

Prepare Swiss Reubens:

  1. Layer Thousand Island dressing on Focaccia bread with sauerkraut (drained of juices and patted dry) thin slices corned beef, slices of imported Swiss. Top with baby gherkins.

For quick caramelized onions:

  1. Thinly slice onion into half moon shape. Cook onions for 20-30 minutes on medium, stirring occasionally until browned. If onions start to burn, add water, 1 tbsp at a time and stir.

For sautéed mushrooms:

  1. Melt butter in pan, add remaining ingredients and cook until browned.

Prepare Gruyere & Mushrooms:

  1. Layer Focaccia bread with Chipotle mayo, sautéed mushrooms, slices of imported Gruyere. Top with caramelized onions and microgreens.
