Ingredients
For Chipotle Mayonnaise:
- 1 cup Mayonnaise
- 2 cup Chipotle in adobo, stemmed and seeded
- 3 tsp Adobo Sauce
- 0 Lime Juice of 1/2 lime
- 0 Salt, to taste
For burgers and assembly:
- 0 Vegetable oil, for grilling
- 1½ lbs Ground Beef
- 0 Kosher Salt, to taste
- 0 Freshly Ground Black Pepper, to taste
- 4 Hamburger Buns, split and lightly toasted
- 1½ cups Fresh Pico de Gallo
- 2 Ripe Avocados, pitted and sliced
- 2 cups Shredded Lettuce

Instructions
- Combine all ingredients for chipotle mayonnaise in blender or food processor and blend until smooth. Cover and refrigerate until ready to use (can be done up to 3 days ahead).
- Preheat grill to 400°F and coat grates with oil. Form ground beef into 4 equal patties and season with salt and pepper to taste. Grill for 5 minutes, flip and to desired doneness. With about 2 minutes remaining on cook time, add 2 slices of Swiss cheese to each patty.
- Spread chipotle mayo on bottom bun and top with shredded lettuce, burger patty, avocado and pico de gallo.
