Ingredients

For Chipotle Mayonnaise:

  • 1 cup Mayonnaise
  • 2 cup Chipotle in adobo, stemmed and seeded
  • 3 tsp Adobo Sauce
  • Lime Juice of 1/2 lime
  • Salt, to taste

For burgers and assembly:

  • Vegetable oil, for grilling
  • 1½ lbs Ground Beef
  • Kosher Salt, to taste
  • Freshly Ground Black Pepper, to taste
  • 4 Hamburger Buns, split and lightly toasted
  • 1½ cups Fresh Pico de Gallo
  • 2 Ripe Avocados, pitted and sliced
  • 2 cups Shredded Lettuce

Instructions

  1. Combine all ingredients for chipotle mayonnaise in blender or food processor and blend until smooth. Cover and refrigerate until ready to use (can be done up to 3 days ahead).
  2. Preheat grill to 400°F and coat grates with oil. Form ground beef into 4 equal patties and season with salt and pepper to taste. Grill for 5 minutes, flip and to desired doneness. With about 2 minutes remaining on cook time, add 2 slices of Swiss cheese to each patty.
  3. Spread chipotle mayo on bottom bun and top with shredded lettuce, burger patty, avocado and pico de gallo.
