Instructions
- Fill large pot with water and bring to boil over high heat. Cook gnocchi according packaged directions; drain. Set aside.
- Melt 1 tablespoon butter in large skillet over medium-high heat. Add ham and cook, stirring frequently, until lightly browned, about 2 to 4 minutes. Transfer plate and set aside.
- Melt remaining butter in the same skillet over medium heat. Add flour and cook, stirring frequently, until no lumps remain, about 1 minute. Whisk in milk and mustard, simmer, stirring occasionally, thick, about 2 to 3 minutes.
- Stir in Gruyere and cook, stirring frequently, until cheese is melted, and sauce is smooth, about 2 to 3 minutes. Season with salt and pepper. Stir in gnocchi and reserved ham until well-coated, 1 minute. Garnish with parsley and serve.
