One-Pot Croque Monsieur Gnocchi Mac-and-Cheese

Ingredients

  • 16 Oz 2 packages dried gnocchi
  • 6 tbsp unsalted butter, divided
  • 8 Oz ham steak, roughly chopped
  • ⅓ cup all-purpose flour
  • 3 cups whole milk
  • 1 tsp Dijon mustard

  • 1 tsp kosher salt
  • ¼ tsp freshly ground black pepper Chopped fresh parsley, for garnish

Instructions

  1. Fill large pot with water and bring to boil over high heat. Cook gnocchi according packaged directions; drain. Set aside.
  2. Melt 1 tablespoon butter in large skillet over medium-high heat. Add ham and cook, stirring frequently, until lightly browned, about 2 to 4 minutes. Transfer plate and set aside.
  3. Melt remaining butter in the same skillet over medium heat. Add flour and cook, stirring frequently, until no lumps remain, about 1 minute. Whisk in milk and mustard, simmer, stirring occasionally, thick, about 2 to 3 minutes.
  4. Stir in Gruyere and cook, stirring frequently, until cheese is melted, and sauce is smooth, about 2 to 3 minutes. Season with salt and pepper. Stir in gnocchi and reserved ham until well-coated, 1 minute. Garnish with parsley and serve.
