For burgers:
- 16 Oz Ground turkey
- 1½ Red onion, finely chopped
- ¼ cup Fresh cilantro, chopped
- 2 cup Garlic cloves, minced
- 1 cup Small jalapeño pepper, seeded and minced
- 0 Kosher salt and freshly ground black pepper, to taste

For chipotle mayonnaise:
- ½ cup Mayonnaise
- 2 Chipotle chilies in adobo sauce
- 1 tbsp Lime juice
For assembly:
- 4 Hamburger buns, split and lightly toasted
- 2 Jalapeño peppers, seeded and sliced into rounds
- 8 slices Thick-cut bacon, cooked
- 8 slices Loose leaf lettuce, leaves separated

Instructions
- Preheat grill to 400°F and coat grates with oil. Combine turkey, red onion, cilantro, garlic, and jalapeno in large bowl until just combined. Form into 4 equal patties, and season both sides with salt and pepper. Grill for 6 minutes, flip and cook additional 4 to 6 minutes, until fully cooked to internal temperature of 165°F. With about 1 minute remaining on cook time, add 2 slices of Cheddar-Gruyere cheese to each patty.
- Meanwhile, combine all ingredients for chipotle mayonnaise in small food processor and process for 1 minute, until smooth.
- Spread chipotle mayonnaise on both sides of buns. Top each bottom bun with layer of lettuce and burger patty. Top with jalapeno slices and bacon and serve.
