Bacon-and-Swiss Patty Melts

Ingredients
- ¾ cup unsalted butter, room temperature
- 1 large yellow onion,cut into 1/4-inch slices
- 1 each small red and green bell pepper, cut into 1/4-inch slices
- 0 Kosher salt and freshly ground black pepper, to taste
- 16 Oz lean ground beef
- 8 slices Texas toast
- 8 slices thick-cut bacon, cooked
- 8 slices Finlandia Imported Swiss Slices

Instructions
- Melt 2 tablespoons butter in large skillet over medium-high heat. Add onion and pepper and cook, stirring occasionally, until light golden-brown tender, about 6 to 8 minutes. Season with salt and pepper. Transfer to plate and set aside.
- Form beef into 4 equal patties, and season both sides with salt and pepper. Melt 2 tablespoons in the same skillet over medium-high heat. Working in batches if necessary, cook patties for 5 minutes, flip and cook an additional 4 to 6 minutes, until desired doneness, or reaches 160°F for well-done. Repeat with remaining patties.
- Generously butter on side of each slice of bread with 1 tablespoon butter. Place 2 slices of bread, buttered-side-down, in the same clean skillet. Top each slice of bread evenly with roughly a ¼ cup of onion mixture, 1 patty, 2 slices of Swiss cheese, 2 slices of bacon and 2 bread slices, buttered-side-down. cook until bread is toasted, and cheese is melted, about 2 to 3 minutes per side. Repeat with remaining bread slices, patties, onion mixture, bacon and Swiss cheese.
- Slice patty melts in half, and serve.
