Grilled Chicken Sandwich with Swiss & Corn Salsa

Ingredients

For Chicken:

  • 4 boneless, skinless chicken breasts
  • ¼ cup olive oil
  • 2 tbsp honey
  • 2 tbsp lime juice
  • ½ tsp chili powder
  • ¼ tsp cumin
  • 8 slices Finlandia Imported Swiss Slices
  • 2 avocados, mashed
  • 4 hamburger buns

For corn salsa:

  • 2 cups fresh or frozen (thawed) corn
  • ½ cup red and green peppers, diced
  • ¼ cup cilantro, finely chopped
  • 1 jalapeno, seeded and finely chopped
  • 1 garlic clove, minced
  • Salt and pepper, to taste

Instructions

For chicken:

  1. Place chicken in a zip-top bag, add the oil, honey, lime juice, chili powder, and cumin. Make sure that chicken is fully coated by marinade. Refrigerate for at least 30 minutes, or up to 6 hours.
  2. Preheat grill, place chicken on grill and cook until internal temp reaches 165°F. Top with 2 slices of Finlandia Swiss. Top bottom of each bun with avocado, place chicken on buns and top with corn salsa.

For salsa:

  1. In a large bowl, combine all of the ingredients together and season with salt and pepper to taste. Chill for at least 1 hour.
