How is the health & wellbeing megatrend redefining food innovation?

Health and wellbeing have become one of the food industry’s defining megatrends, influencing not only what consumers choose to eat but also how food companies innovate. We sat down with Sara Helminen, Senior Consumer Insight Manager at Valio, to discuss the consumer shifts behind the trend and the value creation opportunities it brings for the future of food and beverage innovation. 

Hi Sara! As someone who works closely with consumer insight, you’ve seen health and wellbeing emerge as one of the food industry’s defining megatrends. What’s driving this shift? 

Health has become much more holistic than it was just a few years ago. Consumers increasingly see food as a way to support not only physical health, but also mental wellbeing, energy, sleep, recovery and overall balance in everyday life. At the same time, they’re becoming more focused on outcomes than individual health claims. Rather than simply looking for products with added protein or fibre, they want foods that help them feel fuller for longer, support digestive wellbeing or contribute to healthy ageing. 

Importantly, these benefits can no longer come at the expense of enjoyment. Consumers expect products to combine credible nutrition with great taste, convenience and an enjoyable eating experience.  

What are the biggest consumer shifts shaping food innovation today? 

One of the biggest shifts is the growing focus on nutrient density. Consumers increasingly expect food to deliver more nutritional value in every serving, and the growing adoption of GLP-1 medications is accelerating that change. As appetite decreases and portion sizes become smaller, every bite needs to deliver more – whether that’s high-quality protein, fibre or essential micronutrients. GLP1-derived changes in appetite may also influence sweetness preferences and sensory expectations, creating new opportunities for product development.  

Protein is a good example of how consumer expectations have evolved. It has moved beyond sports nutrition into mainstream, where it’s increasingly associated with satiety, healthy ageing and everyday wellbeing. At the same time, digestive wellness is becoming more important, driving renewed interest in fibre. The challenge for food manufacturers isn’t simply adding more protein or fibre, but delivering those benefits while maintaining the taste, texture and eating experience consumers expect.  

How are these changing expectations influencing food innovation? 

Consumers have more health information than ever before. Wearables, health apps and digital trackers are making people more aware of their individual nutritional needs, creating growing demand for more personalised, even hyper-personalised nutrition. 

This means we need to develop solutions that are relevant to different life stages, lifestyles and wellbeing goals as consumers increasingly expect products to address specific needs with benefits that are both meaningful and backed by science. Dairy is especially strong in this, as it’s inherently versatile and can be turned into a wide range of products with various nutritional profiles and textures. 

What does this mean for food manufacturers? 

To stay ahead amidst the changing trends, we need precision, proof and purpose. Firstly, we need precision to design new products that address specific customer needs and occasions from satiety to digestive comfort. Secondly, scientific proof is more essential than ever, as consumers are drowning in contradictory claims and a wealth of information and trust is harder to earn. And finally, purpose – we need to keep progressing towards a more sustainable and transparent value creation.
