Tailored and traceable high quality fruit preparations

Valio manufactures a range of jams, fillings and marmalades for the food industry, made at our home of flavours in Suonenjoki. Recent significant investment in the plant has delivered a new refrigerated warehouse and production line to make even more tailored, innovative products.

Product range diversity arises from expertise

Suonenjoki’s primary role is making berry products to meet Valio’s own needs. The plant’s product development unit plays an important part in Valio R&D, finding ways to extract exactly the kind of taste and texture from berries for future products. Fruit preparations from the plant put the whole chain creating delicious tastes for Valio products in our own hands.

A proportion of Valio’s berry products and fruit preparations are sold to customers in a portfolio that also includes toffee, caramel and even savoury items. These ingredients are employed in a broad variety of products from quark bars to milk-based drinks and cakes or icing, and in different sectors such as the bakery and ice cream industries.

Working closely with customers

Export Manager Olli Ylösjoki from Valio talks about the product development process undertaken with customers and how flavours are created.

“Ideally we join the customer’s product development process at the ideation phase. Then our own team begins to develop tastes and textures that match that customer’s specific needs. Fruit preparation test batches help us find precisely the right ingredient for the product. We can then guarantee exclusive flavours and combinations not sold to anyone else. Our customers get precisely targeted fully tailored product development.”

Special challenges do arise in e.g. understanding the needs of foreign customers in particular. “Let’s imagine a customer from the Baltic States who wants a preparation tasting like a childhood favourite toffee candy. It’s not easy for product developers to tie it down as they need to know as precisely as possible what the customer is looking for. The exact production parameters are a secondary issue, ultimately it’s the taste that matters,” Mr Ylösjoki explains.

“These people are unashamedly dedicated to their work. It seems to be much more than just a job from eight to four.”

Products are created in Suonenjoki with experience and dedication

Two significant investments made in the Suonenjoki plant delivered a new refrigerated warehouse in the spring, and a ninth production line is on the way. The warehouse ensures a constant supply of freshly frozen berries, and enhanced ingredients management and batch follow-up. Quality ingredients are key and Valio’s principle is to use only first class berries. With a large enough inventory we never need to buy in poorer quality. Valio staff monitor suppliers’ operations for quality and we have forged long relationships with reliable suppliers both in Finland and abroad.

The new production line will enable us to add a range of novel features and produce smaller individual batches where needed. It helps Valio focus also on the future, keeping abreast of industry developments, and be the first to manufacture completely new kinds of product.

The plant is an important employer in Suonenjoki and many generations of Valio staff have made fruit preparations there. “These people are unashamedly dedicated to their work. It seems to be much more than just a job from eight to four,” Mr Ylösjoki says. Know-how in manufacturing jams at Suonenjoki is a matter of expertise accumulated over a long period of time.

Clean food is an absolute perquisite

Valio is a trend leader meeting customer needs. “The Suonenjoki plant is compact which makes for flexibility. Consumers increasingly want natural products, fewer E numbers, and more functional foods. Our ability to react and make tailored products delivers customer satisfaction,” says Olli.

People are looking for products with more berries, fewer flavourings and often less sugar. Fruit preparation manufacturing can be challenging. We create around 90 new products annually for Valio and its customers. Valio is the biggest buyer of berries and producer of berry preparations in Finland, and the Suonenjoki flavour plant deserves praise for its role, with berries in particular.
