Valio Eila® lactose free ingredients include Valio Eila® lactose free milk powders in three different fat varieties; skimmed, semi-skimmed and whole milk. The products have a natural taste of milk. They are manufactured from fresh Finnish milk using Valio’s patented technology for an unchanged milk mineral composition.

The lactose content of Valio Eila® lactose free milk powders is less than 0.1% (in a reconstituted milk drink under 0,01%) and the protein content is higher than in standard milk powders. Products made with Valio Eila® lactose free ingredients provide a choice for lactose intolerant consumers and enable them to enjoy the fresh, natural taste and benefits of dairy without unpleasant symptoms caused by maldigestion.

Valio Eila® lactose free skimmed milk powder (SMP) is suitable for manufacturing a large variety of lactose free foods, from milk chocolate, ice cream and bakery products to ready meals, soups and sauces, and even pet foods. It is also perfect for dietary products given its very low fat and high protein concentrations. It provides milk nutrients, proteins and minerals – and a natural milk taste.As a high protein, fat free powder with low carbohydrate content, Valio Eila® lactose free SMP is excellent for use in a variety of nutritional supplements and dietary products, such as powders, bars and drinks. Valio Eila® lactose free SMP is now available also in instant format which is especially recommended for applications that require quick dissolving properties, for example drink powders. The instant format is lecithinated (rapeseed lecithin) for quick dissolving and enriched with vitamin D.

Valio Eila® lactose free SMP is produced by spray drying pasteurised cow’s milk of Finnish origin. Valio’s patented lactose free process technology delivers a lactose free milk powder that is superior in taste to other lactose free or low lactose milk powders – with a lactose level of less than 0.1%. Valio Eila® lactose free SMP was launched 2007 and selected for the Trends and Innovations Observatory during the SIAL 2008 exhibition in Paris.

Valio Eila® lactose free SMP is widely used by the food industry to create lactose free products and open up new markets. In production, the higher protein content should be taken into account. Dosage can be 20-25 % lower than with standard skimmed milk powder to provide the same milk protein level.

Applications

Ice cream

Lactose free ice cream production is easy with Valio Eila® lactose free SMP, as the process requires no hydrolysation. Usage is similar to standard SMP but with a 20-25% lower dosage due to high protein content. The result is ice cream with a natural milky taste and a soft, pleasant structure.

Milk chocolate

Traditional milk chocolate can be converted into lactose free product by replacing standard SMP with Valio Eila® lactose free SMP. The dosage is 15-20% and the total lactose content of all the raw materials ( such as butter oil) should be taken into account to satisfy the required maximum lactose level for lactose free products. The lactose free chocolate tastes milky, slightly toffee-like and very pleasant.

Dairy products

Valio Eila® lactose free SMP is ideal for various dairy products, as desserts, yoghurts, cheeses and flavoured milk drinks. For example, Valio Eila® lactose free SMP can be used as a natural milk ingredient in the manufacture of fresh cream cheeses, ensuring good water binding and a delicious taste. Milk based desserts can be made lactose free using Valio Eila® lactose free SMP. The resulting taste is delicious and rich while the texture remains excellent.
